Sweetpotato Spider Cookies

- 100 g sweetpotato puree
- 125 g butter
- 180 g brown sugar
- 1 tsp vanilla extract
- 230 g plain flour (sifted)
- ½ tsp baking powder
- ½ tsp baking soda
- 100 g milk chocolate chips
- 70 g desiccated coconut
- 1/2 tsp ground ginger
- ½ tsp ground cinnamon
- 50 Maltesers
- 50 candy eyeballs
- 100g dark chocolate

Directions
Step 1
Preheat oven to 180°C and line an oven tray with baking paper.
Step 2
Beat the butter, brown sugar and vanilla extract in a bowl until combined.
Step 3
Slowly stir in sifted flour, ground ginger, ground cinnamon, baking powder, baking soda and sweetpotato puree.
Step 4
When all ingredients are combined, add the milk chocolate chips and desiccated coconut and work it into the dough.
Step 5
Place one tablespoon of mixture onto the lined oven tray (about 30g) each 10cm apart.
Step 6
Once the tray is full, bake the cookies for 12-15 minutes and once cooked, allow to cool.
Step 7
Using a small amount of warm melted dark chocolate, secure two Maltesers per cookie to form the spider’s body and head.
Step 8
Using a piping bag, create four lines of melted dark chocolate on each side of the cookie to form the spider’s legs.
Step 9
Stick on candy eyeballs with remaining melted chocolate and serve.
