Caramelized Sweetpotatoes with a Spiced Walnut Mince

Ingredients:
- 3 Small Sweetpotatos
- Olive or avocado oil
- Salt
Walnut Mince:
- 150 g Walnuts
- 50 g Mushrooms
- 1 tbsp Tomato Paste
- 1 tsp Maple Syrup
- 1 tsp Oregano
- 1/2 tsp Cumin
- 1 tsp Garlic Powder
- 1/2 tsp Smoked Paprika
- 2 tbsp Olive or Avocado Oil for Frying
- Salt

Directions
Step 1
Halve the sweetpotatoes, brush with avocado oil, sprinkle with salt, and bake cut-side down at 200 °C for about 35 minutes.
Step 2
Roughly chop all ingredients for the walnut mince in a food processor (or blender), then sauté in a little oil for 5–10 minutes. Season with salt at the end.
Step 3
Fill the baked sweetpotatoes and top with avocado, vegan feta, parsley, and a drizzle of yacon syrup.
