Sweetpotato Slides with Smoked Salmon and Chive Cream Cheese

For the sweetpotato slides
- 1 sweetpotato (cut into 1 cm slices)
- 1 tbsp olive oil
For the smoked salmon and chive cream cheese topping
- 2 slices smoked salmon
- 3 tbsp cream cheese
- 1 bunch chopped fresh chives

Directions
Step 1
Preheat the oven to 180°C.
Step 2
Brush the sweetpotato slices with olive oil on both sides, then place them on a baking tray.
Step 3
Bake for 30 minutes.
Step 4
Mix the cream cheese with chopped chives, salt and pepper.
Step 5
When the slides are cooled down to room temperature, spread one teaspoon of the cream cheese mix on each sweetpotato slide, then add the smoked salmon on top.
Step 6
Sprinkle some chopped chives, then serve.
