Sweetpotato Slides with Pear and Stilton

For the sweetpotato slides
- 1 sweetpotato (cut into 1 cm slices)
- 1 tbsp olive oil
For the pear and stilton topping
- 1 pear (sliced)
- 50 g stilton (cut into cubes)
- 3 tbsp apple compote

Step 1
Preheat the oven to 180°C.
Step 2
Brush the sweetpotato slices with olive oil on both sides, then place them on a baking tray.
Step 3
Bake for 30 minutes.
Step 4
When the slides are cooled down to room temperature, spread one teaspoon of apple compote on each sweetpotato slide, then add the 3 cubes of Stilton and a few pear slices.
