Sweetpotato Chocolate Fudgsicles

Sitting on a dish with ice are 8 sweet potato chocolate fudgsicles, some decorated with sprinkles and others decorated with crushed Oreos.


Serving

  • 1/3 cup mashed sweetpotato
  • 1/4 cup cocoa powder
  • 1/8 tsp salt
  • 2 Tbsp cornstarch
  • 1/2 cup maple syrup
  • 1-1 1/2 cups heavy whipping cream
  • 1 3/4 cup full-fat coconut milk
  • 1 tsp vanilla
  • 1/3 cup milk chocolate chips

Directions

Step 1

Microwave your sweetpotato for 4-6 minutes, until soft. Scoop out the flesh and mash it as much as you can. You can do this in a bowl with the back of a spoon or use a potato masher.

Step 2

Add your ingredients (except chocolate chips) to a medium pan over medium-high heat for 5-7 minutes until heated and sweetpotato dissolves, stirring occasionally. The mixture will start to thicken. If you are having trouble getting all of the mashed sweetpotato to dissolve, you can also add it to a blender before pouring in the popsicle moulds. 

Step 3

In the final minute, add your chocolate chips and stir until they melt and dissolve. Turn the heat off.  

Step 4

Arrange your popsicle moulds to pour the chocolate pudding mixture into. You can use a funnel or a piping bag to do this for easier pouring. 

Step 5

Freeze for 4-6 hours. When removing popsicles from molds, place the mold under warm water for a few seconds until the popsicle moves and releases from the mold.  

Step 6

Enjoy as is! You can also dip in melted chocolate and add sprinkles, crushed oreos, or freeze-dried strawberries.
