Sweetpotato Burger with Cranberry Ketchup

For the cranberry ketchup
- 1 onion, peeled and diced
- 50 g dried cranberries, washed
- 60 ml water
- 50 g sugar
- ¼ tsp cinnamon
- 60 ml red wine vinegar
- pinch cayenne pepper
For the patties
- 600 g sweetpotatoes, peeled, washed and diced
- 150 g oat flakes
- 1 egg
- 4 sprigs parsley and cilantro, leaves plucked and finely chopped
- salt and pepper, to taste
- 6 tbsp oil (vegetable or olive oil)
For assembly
- 175 g double cream cheese
- 50 g lettuce hearts, washed and cut into bite-sized pieces
- 250 g Halloumi cheese, dried and cut into 8 thin slices
- 4 ciabatta rolls, split

Directions
Step 1
To make the cranberry ketchup: place cranberries, diced onion, and 60 ml water in a pot. Bring to a boil, then simmer covered for 15 minutes.
Step 2
Strain the cranberries and onion through a sieve, return them to the pot. Add sugar, cinnamon, vinegar, and cayenne. Bring to a boil and simmer until thickened, about 10 minutes. Set aside.
Step 3
Boil the diced sweetpotatoes in salted water for 20 minutes until tender. Drain and cool.
Step 4
Mash the sweetpotatoes and mix with oat flakes, egg, chopped herbs, salt, and pepper. Shape into 4 patties about 1 cm thick. Roll the patties in extra oat flakes.
Step 5
Heat 4 tablespoons of oil over medium heat in a large pan. Fry the patties for approximately 3 minutes on each side. Remove and drain on paper towels.
Step 6
In the same pan, heat the remaining 2 tablespoons of oil and fry the Halloumi slices until golden on both sides (about 3 minutes).
Step 7
Spread cream cheese on both halves of each ciabatta roll. Top with lettuce, sweetpotato patties, fried Halloumi, and cranberry ketchup. Add apple slices or fresh herbs if desired. Close the sandwich with the other half of the roll and add more cranberry ketchup on top.
Step 8
Serve immediately and enjoy.
