Purple Sweetpotato Bloody Mary

- 80 g purple sweetpotato purée
- 120 ml cold water
- 50 ml vodka (optional)
- 1 tbsp lemon juice
- 1 tsp hot sauce
- ¼ tsp celery salt
- ¼ tsp black pepper
- Ice as needed
- 1 celery stick, for garnish

Directions
Step 1
Wash and peel the purple sweetpotatoes.
Step 2
Cut the sweetpotato into evenly sized cubes, and place them in a pot, covering them with cold water.
Step 3
Bring the water to a boil, then simmer for 25–30 minutes until very soft.
Step 4
Drain, reserving a small amount of the cooking water.
Step 5
Transfer the cooked sweetpotatoes to a blender.
Step 6
Blend until completely smooth, adding a little reserved water if needed for a smooth consistency.
Step 7
Whisk the sweetpotato purée with cold water until smooth and drinkable.
Step 8
Add the lemon juice, hot sauce, salt, and pepper.
Step 9
Stir in the vodka if using.
Step 10
Pour over ice and garnish with a celery stick.

You can also use Tajin spice mix to decorate your glass or sprinkle on top of your drink!
