Sweetpotato and Red Lentil Curry Soup UK FR 1 HIRES


Serving

  • 2 tbsp olive oil
  • 2 yellow onions
  • 1 tbsp curry powder
  • 3 cloves of garlic
  • 2 carrots
  • 1 tbsp grated carrot
  • 2 large sweetpotatoes
  • 150 g red split lentils
  • 1 can of coconut milk
  • 1 L veg stock
  • 1 tbsp chopped coriander

Directions

Step 1

Peel the sweetpotatoes, carrots, garlic, onions and ginger.

Step 2

Cut the ingredients into cubes and sauté with the olive oil and curry powder.

Step 3

Deglaze with vegetable stock, add the lentil, coconut milk and cook for about 20 minutes until soft.

Step 4

Blend the soup.

Step 5

Season with salt, pepper.

Step 6

Decorate with cream and the chopped coriander.
