Vegetarian Hot Honey Loaded Sweetpotato

Serving
- 2 sweetpotatoes
- 1 tbsp oil
- 50g TVP mince
- 1/2 onion
- 1 garlic clove
- 2 tsp taco seasoning
- 200ml veg stock

Directions
Step 1
Bake the sweetpotatoes (air fry at 200C for 35-40 mins – prick the flesh, rub in a bit of oil and season with salt first). Heat oil in a pan, fry the onion, add the garlic, add the TVP, add the taco seasoning, fry for a few mins, add the veg stock and simmer for 5-10 mins until the liquid has absorbed.
Step 2
Top baked sweetpotatoes with greek yoghurt (or cottage cheese if you like it), pickled onions, avocado, hot honey, chopped cherry tomatoes with some coriander, salt, black pepper, squeeze of lemon and pickled onions.
Step 3
To make the hot honey, combine 170g of honey with 1-2 teaspoons of chilli flakes in a pan, simmer for 1-2 minutes, then transfer to a jar and allow it to infuse.
