Vegan Sweetpotato Pancakes

- 100g self-raising flour
- 200g self-raising flour
- 125ml oat milk
- 250ml oat milk
- 75g sweetpotato, peeled and cubed
- 150g sweetpotato, peeled and cubed
- ½ tsp baking powder
- 1 tsp baking powder

Directions
Step 1
Boil the sweetpotatoes in water for 10 minutes or until tender, how long they take will depend on the size of the cubes. Drain very well and blend until the sweetpotatoes are pureed.
Step 2
Sift the flour, baking powder and salt into a large bowl. Whisk together the oat milk, vanilla, sweetpotato puree and oil in a separate bowl, then gently combine both the wet and dry ingredients.
Step 3
Grease a large frying pan, add a tablespoon of the batter to the pan and fry for about 3 minutes or until small bubbles appear on the surface of each pancake. Then flip and cook for another minute or until browned.
Step 4
Continue to cook the pancakes in batches and enjoy!
