Directions

Step 1

In a large mixing bowl, combine the mashed sweetpotatoes, flour, and salt.

Step 2

Knead until the dough is smooth and firm. If sticky, add a little more flour.

Step 3

Divide the dough into 8–10 equal balls (about golf ball size).

Step 4

On a lightly floured surface, roll each ball into a thin, round tortilla.

Step 5

Heat a dry skillet or griddle over medium-high heat. Cook each tortilla for about 2 minutes per side, until lightly browned and cooked through.

Step 6

Stack tortillas in a clean kitchen towel to keep them warm and pliable until ready to serve.
