Sweetpotato Savoury Breakfast Bowl

- 2 tsp olive oil
- 1 small clove garlic, minced
- 1 bag spinach
- 20 halved cherry grape tomatoes
- 1/2 avocado, sliced
- 2 cooked and sliced sweetpotatoes
- 2 eggs (fried)
- Sea salt and freshly ground black pepper, to taste
- Sprinkle of feta cheese
- 1tbsp chopped chives
- Salsa sauce or hot sauce

Directions
Step 1
Place the sweetpotatoes on a baking tray and stab a few times all over with a fork.
Step 2
Coat in a drizzle of olive oil and a good pinch of salt, then bake in the oven at 200°C for about an hour, or until fork-tender right through the centre.
Step 3
Peel the sweetpotatoes and slice them.
Step 4
In a small pan, heat the olive oil over medium heat.
Step 5
Add garlic, then cook 30 seconds. Add spinach and tomatoes; cook, stirring often, until softened, 2 to 3 minutes.
Step 6
Cook eggs.
Step 7
Combine sweetpotatoes, spinach, tomatoes, avocado, and egg in a bowl. Season with salt and black pepper, to taste. Garnish with feta cheese and herbs.
Step 8
Serve warm with a few dashes of hot sauce.
