- 80 g rolled oats
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ¼ tsp nutmeg
- ¼ tsp allspice

- 75 g unsalted butter, softened
- 100 g packed light-brown sugar
- 140 g granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 180 g mashed sweetpotatoes
For the add-ins
- 90 g semi-sweet chocolate chips

Directions
Step 1
Preheat oven to 180°C.
Step 2
In a medium mixing bowl, whisk together the flour, oats, baking soda, salt, cinnamon, nutmeg, and allspice.

In a separate bowl, cream the softened butter with both sugars using an electric mixer until light. Beat in the egg, vanilla, and mashed sweetpotato until smooth.
Step 4
Add the dry ingredients to the wet, mixing until just combined. Fold in the chocolate chips. The dough will be wet, let it rest for 5-10 minutes to firm up slightly.
Step 5
Scoop the dough into 4-5 cm mounds and arrange on baking sheets lined with parchment.
Step 6
Bake for 14-16 minutes, until just set. Let the cookies cool slightly before serving.
