Sweetpotato Chocolate Mousse

For the sweetpotato chocolate mousse
  • 2 sweetpotatoes, small to medium size
  • 40 g baking cocoa
  • 1 pinch of salt
  • berries, mint, cocoa powder for garnish

Directions

Step 1

Prick the sweetpotatoes all over with a fork and bake at 220°C for 20-40 minutes until the flesh is very soft. Cool completely.

Step 2

Scoop the flesh out of the skins and place into a tall container.

Step 3

Add the cocoa powder and salt to the sweetpotato flesh and blend or purée until very smooth and creamy.

Step 4

Serve the mousse in small bowls, garnished with fresh berries, mint leaves, and a dusting of cocoa powder.
