Sweetpotato and Tofu Traybake

- 1 block of tofu (280 g) cut into 1 cm dice
- 1 tbsp harissa paste
- 2 tbsp olive oil
- 2 sweetpotatoes
- 2 carrots (cut into sticks)
- 1/2 broccoli
- 1 red onion (cut into quarters)
- 1 leek (2 cm sliced)
- 1 sweed (cut into 1 cm dice)
- 1 bunch rosemary
- 1 bunch thyme

Directions
Step 1
Marinate the tofu with the harissa paste for 4 hours minimum in the fridge.
Step 2
Preheat the oven to 180°C.
Step 3
Mix all the other ingredients in a large bowl, then spread them on a baking tray.
Step 4
Season with salt and pepper.
Step 5
Add the tofu, then roast for 1 hour.
