  • 1 North Carolina sweetpotato
  • 1 red onion
  • 2-3 cloves garlic
  • 100 ml cream
  • Parmesan cheese
  • 300 g pasta

  • Burrata as a topping
  • Salt, pepper, chilli flakes
  • Italian seasoning mix

Directions

Step 1

Peel the sweetpotato and cut it into small cubes.

Step 2

Then, place the cubes in a baking dish along with the quartered onion and 2-3 cloves of garlic.

Step 3

Drizzle with 1-2 tablespoons of olive oil and season. Mix everything well and bake in the oven at 180 degrees for 25-30 minutes.

Step 4

Meanwhile, cook the pasta.

Step 5

Set aside some pasta water.

Step 6

After baking, put the sweetpotatoes in a blender.

Step 7

Add cream, Parmesan, and the pasta water, and blend everything together.

Step 8

Add more pasta water if needed until the desired consistency is reached.

Step 9

Then, mix with the pasta and serve with Burrata, olive oil, pepper, and chilli flakes.
