Purple Sweetpotato Waffles

- 300 g purple sweetpotato purée
- 2 eggs
- 250 ml milk
- 60 g melted butter
- 240 g plain flour
- 2 tsp baking powder
- 2 tbsp sugar
- ¼ tsp salt
- 1 tsp vanilla extract

Directions
Step 1
Wash and peel the purple sweetpotatoes.
Step 2
Cut the sweetpotato into evenly sized cubes, and place them in a pot, covering them with cold water.
Step 3
Bring the water to a boil, then simmer for 25–30 minutes until very soft.
Step 4
Drain, reserving a small amount of the cooking water.
Step 5
Transfer the cooked sweetpotatoes to a blender.
Step 6
Blend until completely smooth, adding a little reserved water if needed for a smooth consistency.
Step 7
Preheat your waffle iron.
Step 8
In a bowl, whisk together eggs, milk, butter, purple sweetpotato purée, and vanilla extract.
Step 9
In another bowl, mix flour, baking powder, sugar, and salt.
Step 10
Combine the wet and dry ingredients gently, forming a batter.
Step 11
Cook the batter in the waffle iron until golden and crisp.
Step 12
Serve the waffle with any toppings you like; we chose blueberries and raspberries.
