Chocolate fudge

  • 400g cooked sweet potatoes
  • 175g chocolate
  • 2 tablespoons maple syrup

Directions

Step 1

On a plate, place the sweet potato cut in 2 and prick it with a fork (as you would a pie crust).

Step 2

Melt the chocolate 3x30sec in the microwave (stirring between each use) or in a bain-marie.

Step 3

Mix the sweet potato flesh with the chocolate and maple syrup.

Step 4

Place in a container lined with cling film or greaseproof paper.

Step 5

Chill for at least 3 hours.

Step 6

Sprinkle with cocoa when serving.
