BBQ Grilled Sweetpotatoes

- 2 medium sweetpotatoes
- 1-2 tbsp vegetable oil
- Salt and black pepper
- Fresh thyme, to garnish

Directions
Step 1
Preheat the oven to 175°C.
Step 2
Peel the sweetpotatoes and slice them into 1cm thick rounds.
Step 3
Place on a baking tray, drizzle with vegetable oil, and season with salt and pepper.
Step 4
Toss to coat evenly.
Step 5
Roast in the oven for 20 minutes, turning halfway through, until just tender.
Step 6
Transfer the sweetpotatoes to a hot barbecue.
Step 7
Cook for 5-6 minutes, turning once, until lightly charred with grill marks.
Step 8
Transfer to a serving plate and garnish with fresh thyme and serve alongside a grilled vegetable platter or as part of a BBQ platter.
