Parmesan Crusted Sweetpotatoes

- 1-2 large NC sweetpotatoes cut lengthwise
- 2 tbsp olive oil
- 1 tbsp Italian seasoning
- 1 garlic clove grated
- 55 g shredded parmesan cheese

Directions
Step 1
Preheat your oven to 200°C and line a baking sheet with parchment paper.
Step 2
Slice your North Carolina sweetpotatoes lengthwise and place in a bowl with the olive oil, Italian seasoning and garlic.
Step 3
Mix well until the sweetpotatoes are well coated. Sprinkle shredded parmesan cheese onto your baking sheet and spread so it’s evenly coated.
Step 4
Place sweetpotatoes cut-side down on top of the parmesan, bake for 30-40 minutes until sweetpotatoes are tender and the bottom layer of cheese is crispy and deeply browned.
Step 5
Remove, let cool and serve topped with herbs, like parsley!
