Sweetpotato Halloween Lollies

Apparatus needed
- you will need 16 lollipop sticks, a lolly mould and a piping bag for this recipe.
- 400 g cooked and mashed sweetpotato
- 150g melted unsalted butter
- 250g melted dark chocolate
- 2 eggs
- 200 g soft brown sugar
- 2 tsp vanilla extract
- 120 g plain flour
- 1 tsp baking powder
- ½ tsp ground ginger
- ½ tsp ground nutmeg
- 50 g additional sweetpotato mash (for the icing)
- 200 g icing sugar
- Confectionary eyes

Directions
Step 1
In a bowl, melt the butter and dark chocolate together over a saucepan of warm water.
Step 2
In a separate bowl, mix the eggs and soft brown sugar and then combine both mixes together before adding the remaining brownie batter ingredients. Ensure they are mixed together thoroughly.
Step 3
Pour the brownie batter into the lolly moulds, filling until ¾ of the cavity is full. Insert the sticks then bake for 20 minutes.
Step 4
Once baked, let the lollipops cool completely.
Step 5
Meanwhile, make the sweetpotato icing by mixing the sweetpotato mash and icing sugar in a bowl then transfer into a piping bag.
Step 6
Unmould the lollies and with the sweetpotato icing, pipe the strips across each brownie at random angles and affix two confectionery eyes to each brownie before serving.
