Sweetpotato, dried tomato and goat’s cheese bricks

Serving
- 320g sweet potato
- 80g buche of goat's cheese or feta cheese
- Olive oil
- Dried tomatoes
- Olives
- 6-8 brick pastry sheets

Directions
Step 1
On a plate, place the sweet potato cut in 2 and prick it with a fork (as you would a pie crust).
Step 2
Cut olives, sun-dried tomatoes, feta and goat’s cheese into small pieces.
Step 3
Mix with sweet potato flesh.
Step 4
Place a mound of the mixture on a sheet of brick pastry and fold as desired.
Step 5
Place the bricks on an ovenproof tray, then brush with a little olive oil.
Step 6
Bake for 15 min at 180°C in a preheated oven.
