- 3 medium sweetpotatoes
- 2 tbsp olive oil
- 2 tbsp melted butter
- 2 garlic cloves
- 2 tbsp chopped parsley
- 3 tbsp grated parmesan
- Salt and pepper

Directions
Step 1
Preheat the oven to 180°C.
Step 2
Slice the sweetpotatoes into even rounds and spread them out on a baking tray lined with parchment paper. Brush the slices with olive oil.

Bake on the middle rack for 25 minutes until tender. Remove and let cool for 5 minutes.
Step 4
Using two forks, gently press into the sweetpotato slices to slightly mash them while keeping their shape.
Step 5
Brush the smashed sweetpotatoes with melted butter, then sprinkle with minced garlic and chopped parsley. Season with salt and pepper.
Step 6
Top each piece with grated Parmesan cheese.
Step 7
Bake again on the top rack for an additional 15 minutes until the Parmesan browns and becomes crispy.
