Sweetpotato Waffles

Serving
- 1 large sweetpotato
- 130 g wheat flour
- 1 tsp baking powder
- 2 eggs
- salt

Directions
Step 1
On a plate, place the sweetpotato cut in 2 and prick it with a fork (as you would a pie crust).
Step 2
Microwave for 10 minutes. Allow to cool to prevent burning.
Step 3
Scoop the inside of the sweetpotato into a bowl and add the remaining ingredients.
Step 4
Season to taste.
Step 5
Heat your waffle maker and grease the holes if necessary.
Step 6
Pour the mixture into the mould and bake the waffle.
Step 7
Repeat until the dough is used up.
