Sweetpotato air-fried brownies — a decadent dessert that combines the natural sweetness of sweetpotatoes with rich dark chocolate.
Serving
For the brownies
- 2 sweetpotatoes, halved
- 4 sweetpotatoes, halved
- 100 g unsalted butter, cubed, plus extra for greasing

Directions
Step 1
Preheat air fryer to 160°C.
Step 2
Butter and line a 20 cm square brownie tin.
Step 3
Wrap the sweetpotatoes in foil, place them on a baking sheet and cook in the air fryer for 35 to 45 minutes or until soft.
Step 4
Once cool enough to handle, scoop out the flesh and weigh 200 g. Place in a bowl and mash until smooth.
Step 5
In a pan over a low heat, melt the butter and chopped chocolate, stirring regularly.
Step 6
Add the light soft brown sugar to the mashed sweetpotato, beat until smooth and gently stir in the melted butter and chocolate.
Step 7
Slowly mix in the eggs, followed by the vanilla extract.
Step 8
Sift in the flour, cocoa powder and ground ginger, and stir until fully combined.
Step 9
Fold in the chocolate chips, pour the batter into the prepared brownie tin and smooth the top.
Step 10
Bake in the air fryer for 15 to 20 minutes until just set and slightly soft in the centre.
Step 11
Allow to cool in the tin, then remove and cut into pieces.
