Sheet Pan Pork Chops and Sweetpotatoes

- 4 boneless pork loin chops
- 3 tbsp maple syrup
- 2 medium sweetpotatoes
- 1 yellow onion
- 1 diced apple
- 2 tbsp olive oil
- ¼ tsp salt
- ⅛ tsp pepper
- ½ tsp garlic powder
- 1 tbsp thyme

Directions
Step 1
Put pork chops in a ziplock bag and add maple syrup for a marinade. Leave it in the fridge for 1-2 hours beforehand (if you don’t have time to do this, just pour the maple syrup over the pork on the sheet pan).
Step 2
Preheat oven to 220°C. Season pork chops with salt, pepper and place on a sheet pan.
Step 3
Mix sweet potatoes, onion and diced apple in mixing bowl. Add olive oil, salt, pepper, garlic salt, thyme and remainder of maple syrup. Mix, and then transfer mixture to sheet pan.
Step 4
Bake for 20-25 minutes, tossing halfway through.
