Holiday Dinner with the In-Laws

Serving

  • 120ml sweetpotato juice reduction
  • 120ml vodka (we recommend Smirnoff fluffed marshmallow)
  • 60ml Rivulet pecan liqueur
  • Marshmallow fluff, for rimming the glass
  • TERRA cinnamon sweetpotato chips, pulverised, to rim over marshmallow fluff

Directions

Step 1

Using a juicer, juice enough sweetpotatoes to acquire 1 cup of juice. In a small saucepan, reduce sweetpotato juice by half and let cool.

Step 2

Pour sweetpotato chips into a sturdy Ziploc bag and crush with a rolling pin or other heavy object, or lightly pulse in food processor. Pour chips onto small plate and set aside.

Step 3

With a small spatula, spread a generous amount of fluff around the rims of two martini glasses. Dip the rims into the pulverised chips to coat.

Step 4

In a cocktail shaker, combine reduced sweetpotato juice, vodka and Rivulet liqueur. Shake vigorously.

Step 5

Pour into prepared martini glasses and serve.
