BBQ Chicken and Sweetpotato Quesadilla

- 2 6 inch flour tortillas
- 70 g shredded chicken
- 55 g roasted NC sweetpotatoes
- 2 tbsp black beans
- 2 tbsp pineapple tidbits
- 35 g shredded monterey jack cheese
- 1 tbsp BBQ sauce

Directions
Step 1
Heat the pan to medium-low heat. Place the tortilla in the pan.
Step 2
Add chicken, bbq sauce, sweetpotatoes, black beans, and pineapple.
Step 3
Sprinkle with cheese and top with the remaining tortilla.
Step 4
Cook for 4-5 minutes. The bottom of the tortilla should be toasted. Flip and cook for an additional 4 minutes.
Step 5
Remove from heat and cut into quarters.
