Serving

For the purple sweetpotato shrub
  • 3–4 peeled and sliced purple sweetpotatoes
  • 2 sliced lemons
  • 15g ground black pepper
  • 120g granulated sugar
For the cocktail
  • 40ml gin (we recommend Sutler’s)
  • 8ml Chartreuse yellow liqueur
  • 15ml fresh lemon juice
  • 30ml purple sweetpotato shrub
  • 1 egg white

Directions

Step 1

To make the purple sweetpotato shrub

Step 2

Place sweetpotatoes, lemon and black pepper in a large bowl and toss gently. Cover with sugar and wrap in cellophane. Allow to rest in a cooler or refrigerator for 2–3 days.

Step 3

After resting, strain off the liquid and mix with an equal ratio of rice wine vinegar. Pour into a container, cover, label, and date.

Step 4

Store in a cooler or refrigerator. Shelf life is 30 days.

To make the mocktail

Step 6

Combine all ingredients in a shaker with ice; shake vigorously.

Step 7

Strain into an empty vessel and dry shake for 30 seconds.

Step 8

Pour into a chilled coupe glass and garnish with purple sweetpotato batons and a sprinkle of cracked black pepper.
